V.V. impressed with top chef, quality cooking brothers. Afraid i'm limited to pizza dough, toppings and ... pickle

I confuse pickle with chutney so here is my recipe for green ( or red ) tomato chutney/pickle

loosely based on D. Smith's Complete Cookery Course book

2 1/2 lb green toms
1 lb apples
1 lb pears
1 lb plums
1 lb raisons
some damsons or other fruit lying around
1 lb 6oz soft dark sugar
loads of garlic
chopped up chili to taste
1oz pickling spice
1/2 tbs cayene pepper
2 dsp ground ginger
1/2 tbs salt
3 pints genuine malt vinegar

I doubled the quantities above

chop it all up, put in pan and simmer ooh so gently for a day

when it's cooked a wooden dragged across the surface will leave a channel for a few seconds

pour into hot jars and eat at Christmas!

easy peasy and makes a lovely smelly house

forgot recipe should have lots of onions too! - yes did double it, it got bigger and bigger, ended up in three pans
